Yep, it's ugly...but it's good. A perfect balance of black beans, cilantro and zesty spices.
Recipes:
1. Use instead of sour cream with your quesadillas and nachos.
2. Prepare Ugly Black Bean Dip Mix according to the package instructions and use in place of the plain sour cream and butter in your favorite mashed potato recipe.
3. Twice Bakes: Scrub the skins of 4 medium baking potatoes. Pierce potatoes with a knife and wrap each in aluminum foil. Bake in a 425 degree oven until the center is soft by testing with a sharp knife – approximately 45 – 60 minutes. Remove potatoes from the oven. Unwrap and cut each potato in half, lengthwise. Allow to cool until you can handle them. Using a tablespoon, scoop out the insides of each half into a large mixing bowl. Add the prepared Ugly Black Bean Dip, 1/4 tsp. black pepper, 1/4 tsp. garlic salt and 2 TBS. butter and 1/4 Cup milk. Using an electric mixer, blend until almost smooth. Using a spoon, stir in 1/2 to 1 Cup shredded cheddar cheese to the mixture. Dividing the mixture evenly, refill the potato shells and place in a non-stick pan. Return to the oven at 375 degrees and bake an additional 15 – 20 minutes.
